Fresh Mango Relish
Ingredients
- 1 small red onion, finely chopped
- 1 large ripe mango, finely diced
- A handful of cherry tomatoes, finely chopped
- 1-2 red chilli, finely chopped
- A few sprigs of mint, finely chopped
- 1 tspn caster sugar
- Juice of 1 lemon to taste
Let’s Cook
- In a large bowl put the onion, mango, tomatoes, chilli and mint and mix well together.
- Add sugar and lemon juice to taste.
- Chill before serving to allow the flavours to mingle.
